Ingredients
- ओट्स / Oats grinded – 1 cup
- रवा / सूजी / Semolina – 1/4 cup
- हींग / Asafoetida – a pinch
- मीठ / नमक / Salt – as per taste
- बेकिंग सोडा / Baking Soda – 1/4 tsp
- जीर / जीरा / Cumin seeds – 1/2 tsp
- दही / Curd – 1 cup
- पाणी / Water – around 1/4 cup
- तेल / Oil – as needed
Toppings
- कांदा / प्याज / Onion – 1 finely chopped
- मिर्ची / मिर्च / Green Chili – 2 finely chopped
- टमाटर / Tomato – 1 finely chopped
- गाजर / Carrot – 1 grated
- कोथंबीर / धनिया पत्ता / Coriander finely chopped
Making uttapam batter
- Grand oats to make powder, take 1 cup powdered oats in mixing bowl
- Add Rava, Hing/Asafoetida, Baking soda, Jeera, Salt to taste to the bowl, mix well
- Add curd to the bowl, mix well
- Add water to make medium thick batter
- Stir the batter for 1-2 min
- Cover and set aside batter for 15-20 min
Making Uttapam
- Stir the batter well before starting the make uttapam
- Heat the pan on medium heat
- Add few drops of oil, spread all over the pan
- Pour little batter to the pan, spread evenly
- Add toppings – onion, chili, tomato, carrot, coriander on the uttapam
- Leave few drops of oil to the sides of Uttapam
- Turn the Uttapam and cook for 1-2 min more, press gently few time while upside down, helps with sticking the the toppings to uttapam
- Flip back, Uttapam is ready
Tips
- Finely chopped spinach, green peppers are other toppings option
- Oil on the sides helps add little crunchiness to the uttapam
- Fine Semolina is best suited for this recipe
- Grinded coarse Semolina can also be used
