Ingredients
- Grated Dudhi / Lauki – 1 cup
- पीठ / आटा / Chapati Flour – 2 cups
- बेसन / Gram flour – 1/4 cup
- तेल / Oil – 1 tbsp
- ओवा / अजवायन / Carrom seeds – 1/2 tsp
- बडीशेप/ सौंफ / Fennel – 1 tsp
- तीळ / तील / Sesame – 1 tsp
- गुड़ / Jaggery crushed – 1 tsp
- जीरेपूड / जीरा / cumin powder – 1 tsp
- हळद / हल्दी / Turmeric – 1 tsp
- तिखट / लाल मिर्च / Chilli powder – 2 tsp
- मीठ / नमक / Salt – as per taste
- दही / Curd – 1/4 cup
Kneading dough
- Grate Dudhi / Lauki and squeeze excess water from the grated Lauki
- Take flour in mixing bowl, add Gram flour and Oil, rub everything together for 2min
- Now add remaining ingredients to the four mixture and mix well
- Add little water at a time to make dough similar to chapati dough
- Cover and set aside for 10-15 min
Cooking
- After waiting, take a little oil on palms and knead dough for 1-2 min to make smooth dough
- Divide the dough in 10- 12 small rounds
- Roll the round same as Thepla / Paratha / Chapati, with Chapati roller
- Heat the Tava on medium heat, place the rolled Thepla on tava
- Cook one side, turn and cook other side
- (Optional) Apply oil on each side for crispier Thepla
- Repeat the process for remaining Thepale
- Thepale are ready
Tips
- Rubbing oil with flour is important step to get flaky texture to Thepala
- Use small quantity of water at a time while making dough
- Besan is optional
