Ingredients

  • इडली तांदूळ / इडली चावल / Idli Rice – 3 cup
  • उळीद डाळ / उरद डाल / Black Gram (Urad Dal)-1 cup
  • मीठ / नमक / Salt – per taste

Making

  1. Wash and clean rice, then soak it for 5-6 hours
  2. Wash and clean black gram (urad dal), then soak for 5-6 hours
  3. Strain soaked dal and grind to fine paste, use little water to help with grinding
  4. Strain soaked rice and grind to fine paste, use little water to help with grinding
  5. Now mix both grind paste well
  6. Add salt, mix well
  7. Cover and let it ferment overnight, the batter would rise, become light and fluffy
  8. Now prepare idli cooker
  9. Grease idli mold, add little batter in each mold
  10. Stream idli for 12 min
  11. Let it cool down for 2 min and demold idli
  12. Idli is ready to serve

Tips

  • If you don’t have idli rice, you can use any short grain rice
  • Smooth grinded batter makes fluffy and light idli
  • Keep batter in warm place to get nice fermentation
  • Serve with sambar, coconut chutney
