Ingredients – Marination

  • लहान बटाटे / छोटे आलू / Baby Potatoes – 500 gms
  • दही / Curd – 1/4 cup
  • जिरे पावडर / जीरा पाउडर / Cumin powder – 1 tsp
  • ितखट / लाल िमर्च / Chili powder – 1 tsp
  • मिरपूड पावडर / काली मिर्च पाउडर / Pepper powder -1/2 tsp
  • कसूरी मेथी / Dried Fenugreek leaves – 1 tbsp
  • आमचूर / Aamchoor powder – 1/2 tsp
  • गरम मसाला / Garam Masala – 1/2 tsp
  • लिंबाचा रस / नींबू का रस / Lime juice – 1 tsp
  • तेल / Oil – 1 tbsp
  • बेसन / Gram flour – 2 tsp
  • मीठ / नमक / Salt – per taste

Instructions Marination

  1. Wash and clean potatoes, poke holes in potatoes
  2. In bowl take curd, add cumin powder, chili powder, pepper powder, dried fenugreek leaves, aamchoor powder, Garam Masala, lime juice mix everything well
  3. Add oil, gram flour, salt to taste, mix well, marination is ready
  4. Add potatoes to the marination, mix well
  5. Transfer potatoes to baking tray, bake for on 375 F / 200 C for 20 min
  6. Potatoes would be soft

Ingredients – Masala

  • तेल / Oil – 2 tbsp
  • अद्रक / अदरक / Ginger – 1 inch
  • िहरवी मिरची / हरी मिर्च / Green Chili – 2
  • लसुन / लेहसुन / Garlic – 7-8
  • कांदा / प्याज / Onion – 2
  • काजू / Cashew – 2 tbsp
  • सुकी लाल मिरची / सुखी लाल मिर्च / Dry red chilli – 3-4
  • टमाटा / टमाटर / Tomato – 1

Instructions Masala

  1. In a pan, add oil, heat on medium
  2. Add ginger, green chili, garlic, saute for for 30 sec
  3. Add onion, saute till onion are soft
  4. Add cashew, dry red chili, saute for for 1 min
  5. Add tomato, saute till tomato are soft
  6. Turn off heat and let it cool down
  7. Now grind masala to fine puree
  8. Masala is ready!

Ingredients – Curry

  • तेल / Oil – 3 tbsp
  • दालिचनी / दालचीनी / Cinnamon – 1/2 inch
  • वेलदोडा / इलायची / Cardamom – 3
  • तमालपत्र / तेज़पत्ता / Bayleaf – 2
  • मीरे / काली िमर्च / Black peppers – 5-6
  • लवंग / लौंग / Clove – 2
  • जिरे / जीरा / Cumin seeds – 1 tsp
  • जिरे पावडर / जीरा पाउडर / Cumin powder – 1 tsp
  • धणे पूड / धनिया पाउडर / Coriander powder – 1 tsp
  • गरम मसाला / Garam Masala – 1 tsp
  • मीठ / Salt – per taste
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • दही / Curd – 1/4 cup
  • कोथंबीर / धिनया पत्ता / Coriander leaves

Instructions Curry

  1. In a pan, add oil, heat on medium
  2. Add cinnamon, cardamon, bayleaf, black peppers, cloves, cumin seeds, saute for 30 sec until arromatic
  3. Add grind masala, mix well, saute till oil starts to separate,
  4. Add cumin powder, coriander powder, gram masala, salt to taste, turmeric mix well, saute for 30 sec
  5. Add curd, mix well, saute for 30 sec
  6. Add little water mix well, cover and cook for 2-3 min
  7. Add potatoes, mix well
  8. Ad needed add little water, cover and cook for 2-3 min more
  9. Garnish with some chopped coriander
  10. Dum aloo is ready!

Tips

  1. Regular potatoes cut to big chunks can be used as alternative to baby potatoes
  2. Baking potatoes in oven is an healthy alternative to frying
  3. Grind masala fine to get smooth gravy
  4. Serve with Roti, Naan, Rice
