Preparation
Ingredients
- बेसन / Gram flour – 2 cups
- दूध / Milk – 3 tbsp
- तूप / घी / Ghee – 2/3 cup
- खवा / खोया / Mawa – 1/4 cup
- दूध / Milk – 1/3 cup
- साखर / Sugar – 1 cup
- वेलदोडा / इलायची / Cardamom – 1/2 tsp
Ingredients
- In a bowl take gram flour
- Add milk, mix well, you will get granular texture
- Grind the mixture to fine powder
- Now in a pan, add ghee, let it melt
- Add besan, mix well, roast mixture on low heat till oil starts to separate
- Add mawa, mix well, break any lumps, set aside
- Now in a pan add sugar, and 1 cup water, mix well to dissolve sugar
- Cook till single string consistency
- Add cardamom powder, mix well,
- Now add this to besan mix, mix well, break all lumps, cook till binding consistency
- Turn off heat, transfer to plate, let it cool down
- Make lemon size portions
- Take a portion, roll to make round, give modak shape
- Now using a toothpick make design, make small lines at bottom, and extend lines from bottom curving to top, repeat for every alternate marking
- Beautiful Modak is ready!
Tips
- Applying milk to besan is impotart to get gralulated (danedar) texture
- Roast besan in ghee takes up to 20 min, this is important to get delicious taste
- Adjust suagar from 2/3 to 1 cup as per your liking
