Preparation

Ingredients

  • Vinegar – 2 tbsp
  • तूप / घी / Ghee – 3 tsp
  • दूध / Milk – 1.25 liter
  • पिस्ता, काजू / Mix nuts (pistachios, cashews) – 1/4 cup
  • गुलकंद / Rose petal spread – 1 tbsp
  • गुलाब सिरप / Rose syrup – 3 tbsp
  • दूध पावडर / Milk powder – 1 cup

Ingredients

  1. Bring 1 ltr milk to boil on medium heat, stir regularly to avoid sticking at bottom
  2. Mix 2 tbsp vinegar with 1/4 cup water
  3. Once milk boils, vinegar mix little at a time
  4. Milk will start to curdle, continue to cook for 1-2 min, you will see water and milk solids separates completely. Turn off the heat
  5. Drain curdled milk using cheese / muslin cloth, you will be left with paneer / chenna
  6. Rinse the paneer with cold water, that will help with washing out vinegar sourness and smell
  7. Collect all the edges of cloth together and squeeze out excess water from paneer
  8. Set aside for 25-30 min, to drain any leftover water
  9. Roast nuts in 1 tsp ghee till light golden
  10. Chop roasted nuts fine
  11. Add chopped nuts with rose petal spread, mix well
  12. Make 8-10 small pieces and roll to make them round, set aside
  13. Now a pan add 1/2 cup milk, mix rose syrup
  14. Add milk powder, mix well, cook on low-med heat till mixture solidifies
  15. Add 2 tsp ghee, mix well, collect mawa let it cool down
  16. Massage mawa to make it smooth, break in lime size pieces
  17. Massage a piece, make it flat, flat 1 nut round an wrap with mawa evenly
  18. Roll to give modak shape.
  19. Now using a toothpick to give it nice spiral shape
  20. Gulkand Modak are ready!

Tips

  1. Washing paneer with cold water is must to remove vinegar smell
  2. If you like you can use mold to make Modak
  3. While making modak if mawa is cracking microwave for 10 sec

How to serve

  1. Serve fresh
  2. Store in refrigerator for 2-3 days
