Ingredients
- दोडका / तुरई / Ridge Gourd – 500 gm
- तेल / Oil – 2 tbsp
- मोहरी / राई / Mustard seeds – 1/2 tsp
- जिरे / जीरा / Cumin seeds – 1/2 tsp
- हींग / Asafoetida – a pinch
- लसुन / लेहसुन / Garlic (chopped) – 3-4
- हळद / हल्दी / Turmeric – 1/2 tsp
- मीठ / नमक / Salt – per taste
- टमाटा / टमाटर / Tomato – 1 chopped
- तिखट / लाल मिर्च / Chili powder – 2 tsp
- शेंगदाने / मूंगफल्ली / Roasted Peanuts powder – 4 tbsp
- कोथंबीर / धनिया पत्ता / Coriander leaves
Cooking
- Peel off ridges from gourd, cut in small pieces
- Heat oil in a pan
- Add mustard seeds, cumin seeds, saute for 30 sec
- Add pinch of asafetida (hing), mix
- Add chopped garlic, mix well, saute for 30 sec
- Add turmeric, chili powder mix well
- Add chopped gourd, mix well
- Add salt to taste, mix well
- Add chopped tomato, saute till tomato softens
- Add roasted peanut powder mix well
- Add little water to help with cooking, cook gourd to desire softness.
- Garnish with coriander
- Ready to serve
Tips
- Choose fresh green gourd for best test
- Adjust cooking time as per desired softness to gourd
- You can add little more water if you like semi gravy consistency
How to serve
- Serve with chapati, roti
