Ingredients

  • दोडका / तुरई / Ridge Gourd – 500 gm
  • तेल / Oil – 2 tbsp
  • मोहरी / राई / Mustard seeds – 1/2 tsp
  • जिरे / जीरा / Cumin seeds – 1/2 tsp
  • हींग / Asafoetida – a pinch
  • लसुन / लेहसुन / Garlic (chopped) – 3-4
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • मीठ / नमक / Salt – per taste
  • टमाटा / टमाटर / Tomato – 1 chopped
  • तिखट / लाल मिर्च / Chili powder – 2 tsp
  • शेंगदाने / मूंगफल्ली / Roasted Peanuts powder – 4 tbsp
  • कोथंबीर / धनिया पत्ता / Coriander leaves

Cooking

  1. Peel off ridges from gourd, cut in small pieces
  2. Heat oil in a pan
  3. Add mustard seeds, cumin seeds, saute for 30 sec
  4. Add pinch of asafetida (hing), mix
  5. Add chopped garlic, mix well, saute for 30 sec
  6. Add turmeric, chili powder mix well
  7. Add chopped gourd, mix well
  8. Add salt to taste, mix well
  9. Add chopped tomato, saute till tomato softens
  10. Add roasted peanut powder mix well
  11. Add little water to help with cooking, cook gourd to desire softness.
  12. Garnish with coriander
  13. Ready to serve

Tips

  1. Choose fresh green gourd for best test
  2. Adjust cooking time as per desired softness to gourd
  3. You can add little more water if you like semi gravy consistency

How to serve

  1. Serve with chapati, roti
