Ingredients – Batter

  • तांदूळ / चावल / Rice – 2 cups
  • उळीद / उरद / Black gram – 1/3 cup
  • चना दाळ / Gram – 1/8 cup
  • मीठ / नमक / Salt – as per taste

Making – Batter

  1. Wash and rinse rice well, soak in water for 5-6 hours
  2. Wash and rinse black gram and channa gram well and soak in water for 5-6 hours
  3. After 5-6 hours, strain lentils and grind to fine batter, use little water to help with grinding
  4. Similarly strain rice and grind to fine batter.
  5. Mix both the batter together, add salt to taste and mix well.
  6. Cover and let it ferment overnight

Ingredients – Vegetable Mix

  • तेल / Oil – 1 tbsp
  • मोहरी / राई / Mustard seeds- 1/2 tsp
  • जीर / जीरा / Cumin seeds – 1/2 tsp
  • हींग / Asafoetida – a pinch
  • कढीपत्ता / Curry leaves – 8-10
  • मिरची / Green Chili – 2-3
  • कांदा / प्याज / Onion chopped – 1
  • मीठ / नमक / Salt – as per taste
  • मटर / Green Peas – 2 tbsp
  • फरसबी / Green beans -2 tbsp
  • शिमला मिर्च / Green Pepper – 2 tbsp
  • गाजर / Carrot – 1/4 cup

Making – Vegetable Mix

  1. Heat oil in a pan on medium
  2. Add mustard seeds, cumin seeds, mix well
  3. Add pinch of asafetida, mix well
  4. Add curry leaves, finely chopped green chili, sauté for 30 sec
  5. Add finely chopped onion, sauté till onion is soft
  6. Add green peas, finely chopped beans, green peppers, grated carrot, sauté for 2 min
  7. Let it cool down

Instruction – Making Appe

  1. Add sautéed vegetables to batter, mix well
  2. Add finely chopped coriander to batter and mix well
  3. Heat Appe mold, add few drops of oil, spread oil mold, pour little batter in each section. Cover and cook for 2 min on med. now flip appe and cook other side for 2-3 min more. Repeat as required to get crispy Appe
  4. Crispy fluffy Appes are ready!

Tips

  1. Grind rice and lentil to fine to get best results
  2. Fermentation works well better at warm places
  3. Cook both sides well till crisp

How to serve

  1. Serve Hot!
  2. Serve with coconut chutney, sambar
