Ingredients – Veg Cutlet

  • तेल / Oil – 1 tbsp
  • अदरक /Ginger finely chopped – 1 tbsp
  • मिरची / Green Chili chopped – 2-3
  • कांदा / प्याज / Onion fine chopped- 1
  • मक्का / Corn – 1/4 cup
  • पत्ता गोबी / Cabbage – 1/2 cup
  • फरसबी / Green beans -1/4 cup
  • गाजर / Carrot – 1/4 cup
  • मटर / Green Peas – 1/4 cup
  • बटाटा / आलू / Potato boiled – 3 med
  • कोथंबीर /धिनया / Coriander chopped
  • मीठ / नमक / Salt – as per taste
  • पातीचा कांदा / Spring Onion – 1 tbsp
  • गरम मसाला / Garam Masala – 1/2 tsp
  • हळद / हल्दी / Turmeric – 1/2 tsp
  • तिखट/ लाल मिर्च/ Chili powder- 1tsp
  • चाट मसाला / Chaat Masala – 1/2 tsp
  • कसूरी मेथी/ Dry Fenugreek leaves- 1 tbsp
  • जीरेपूड / जीरा / Cumin powder – 1tsp
  • लिंबू / नींबू / Lime juice – 1 tsp
  • Break crumbs – 1/3 cup
  • Corn starch- 1/4 cup
  • मैदा / White flour – 1/4 cup
  • Oil for frying

Prepration Veg Cutlet

  1. Heat pan on medium add 1 tbsp oil
  2. Add ginger and green chilies sauté for minute
  3. Add onion sauté and cook until onion soft
  4. Now add sweet corn, finely chopped cabbage, green beans, carrot and green peas, mix well add little salt, cook for 1-2 min, turn off heat let it cool down
  5. Take mixing bowl add boiled potato, finely chopped coriander leaves, finely chopped green onion, salt, garam masala, turmeric powder, red chili powder, chaat masala, kasoori methi, cumin powder, pepper powder, lemon juice mix well
  6. Now add sauted veggies and bread crumb, mix everything well
  7. Take portion of mix and make cutlet of any shape and size, cookie cutter can also be used to make cutlet
  8. Similarly make all cutlets
  9. Take wide bowl add cornstarch, white flour and water mix together and make slurry
  10. In a wide bowl add breadcrumbs
  11. Take a cutlet dip it in slurry and then add to breadcrumbs, coat cutlet completely with breadcrumbs
  12. Repeat step 12 again to get nice crunch to cutlet
  13. Same way make all cutles ready for cooking

Cooking Cutlets

Deep frying

  1. Heat oil on medium for frying
  2. Add 3-4 cutlets in pan, for even cooking fry on medium heat, turn occasionally
  3. Once cutlets become golden in color, remove in plate
  4. Fry remaining cutlets same way

Method 2 – Baking

  1. Preheat oven on 400 degree Fahrenheit / 200 degree Celsius
  2. Grease baking tray, place cutlets in tray, spray little oil on cutlets and bake for 10-15 min, half way through flip cutlets to cook evenly on both sides

Method 3 – Shallow Fry

  1. Take a pan, heat on medium.
  2. Add little oil to the pan, add cutlets
  3. Cook all sides evenly till golden

Tips

  1. Adding maida / white flour to slurry adds a nice crispy coat around cutlet
  2. Bake in oven or shallow fry as alternativies to frying

How to serve

  1. Serve hot!
  2. Serve with Spicy / Mint chutney
  3. Goes well as starter / snack in a party / tea time snack
