Ingredients Milk Barfi
- दूध / Milk – 2 ltr
- लम्बु / नींबू / Lime juice – 1 tsp
- साखर / शक्कर / Sugar – 3/4 cup
- इलायची / Cardamom – 1/4 tsp
- जायफळ / Nutmeg powder – pinch
Preparation Milk Barfi
- Heat a heavy bottom pot, add splash of water, this helps reduce the sticking at bottom
- Add Milk to the pot, bring it to boil
- Now reduce heat to low and cook milk till it reduces to half
- Add lime juice, little at a time, milk solids will start to form
- Cook till all water evaporates
- Add sugar, mix well and cook till sugar dissolves
- Add cardamom and nutmeg, mix well
- Cook till mixture solidifies
- Now prepare mould, grease and add parchment paper at bottom, add mix to mould, give it a tap, cover with a lid
- Wrap it with thick cloth all around, set aside for 4-6 hours
- once cooled, de mold, cut in desired size shapes
- Garnish with pistachios / nuts
- Milk Barfi is ready!
Tips
- Make sure to stir continuously to avoid sticking / burning at bottom
- Adjust sugar to your liking
- Add lime juice 2/1 tsp at a time, mix well, to avoid quick milk curdling
