Ingredients – Thai Green Curry
- तेल / Oil – 1 tbsp
- कांदा / प्याज / Onion square pieces – 1 small
- Green curry paste – 1.5 tbsp
- नारळ दूध / नारियल दूध / Coconut milk – 1.25 cup
- Soyabin chunks – 1cup
- गाजर / Carrot sliced – 1/4 cup
- Brocolli small pieces – 1/4 cup
- शिमला मिर्च/ Red peppers – 1/4 cup
- मीठ / नमक / Salt – as per taste
- साखर / शक्कर / Sugar – 1.5 tsp
- लिंबू/ नींबू / Lime juice – 1 tsp
Making Thai Green Curry
- Soak Soybean chunks in warm water for about 10-15 min until soft
- Heat pan on med, add oil
- Add square chopped onion, sauté for about 30 sec
- Add green curry paste, mix well
- Add 1/8 cup coconut milk to pan, mix well, sauté for about 1min
- Add soaked soya chunks, carrot, broccoli, red peppers, salt mix well, sauté
- Add 1 cup coconut milk, mix well
- Add salt, sugar mix well,
- Simmer for 2-3 min
- Turn off heat, give it stir, add lime juice, mix well
- Creamy, spicy green curry is ready!
Tips
- You can add other veggies like bamboo shoots, green peppers
- Cook veggies to desired softness, I prefer a little crunch in cooked veggies
- For extra hot spiciness add 1 tsp more green curry paste
- Tastes best with Jasmine Rice
