Ingredients – Kadhai Paneer
- धने / धिनया / Coriander seeds – 2 tbsp
- जीर / जीरा / Cumin seeds – 2 tsp
- बडीशेप/ सौंफ / Fennel seeds – 1/2 tsp
- लाल िमरची / Dry red Chili – 1 large
- तेल / Oil – 4 tbsp
- अदरक / Ginger – 1 inch
- लसुन/ लेहसुन/ Garlic chopped- 2-3 cloves
- कांदा / प्याज / Onion chopped – 1 large
- टमाटर / Tomato cut – 1
- मीठ / नमक / Salt – as per taste
- हळद / हल्दी / Turmeric – 1/4 tspि
- तखट / लाल िमर्च / Chili powder – 1tsp
- गरम मसाला / Garam Masala – 1/2 tsp
- कांदा / प्याज / Onion chopped square – 1
- िशमला िमर्च / Green Pepper – 1 cup
- पनीर / Paneer – 10-12 pc
- Fresh cream – 1/4 cup
- कसूरी मेथी / Kasoori Methi – 1 tsp
Making Kadhai Paneer
- Heat pan on medium, add coriander seeds, cumin seeds, fennel seeds roast till light brown, set aside
- Roast dry red chili for 30 sec
- Grind roasted seeds and roasted dry red chili together to coarse powder, set aside this powder
- Now heat 1 tbsp oil in a frying pan, add ginger, garlic and sauté for about 30 sec on med heat.
- Add onion to the pan, sauté till onion turns light brown
- Add tomato, mix well, sauté till tomato is cooked.
- Add turmeric, chili powder, Garam Masala, mix well, if needed add little water to mix well and cook for 1 more min on med, now turn off heat and let it cool down
- After cooking grind this mix to fine puree
- Now heat 1 tbsp of oil in a pan, add square chopped onions and green pepper to the pan, sauté for about 1 min on med. set aside.
- In the same pan, now add 1 more tbsp oil, add paneer pieces, add 1 tbsp roasted seeds powder, mix well, sauté for about 1 -2 min, set aside.
- Take is deep pan (Kadhai), add 1 tbsp oil, heat on medium
- Add masala puree, mix well. Cover and cook for 2 min on med
- Add fresh cream, and kasoori methi, mix well, cover and cook for additional 2 min
- Now add roasted onion, green peppers and paneer, mix well.
- Flavorful Kadhai paneer is ready!
Tips
- Adjust spice level to your liking
- Roasting paneer with dry masala give paneer nice flavors
- Adding fresh cream to gravy is optional
- Green pepper and onion toppings should have little crunch
