Carrot Barfi

Ingredients

  • तूप / घी / Ghee – 2 tbsp
  • गाजर / Carrot grated – 1 cup
  • Heavy cream – 1/4 cup
  • पनीर / Paneer – 1.5 cup
  • दूध पावडर / Milk Powder – 1.5 cups
  • दूध / Milk – 1/2 cup
  • साखर / शक्कर / Sugar – 6 tbsp
  • इलायची / Cardamom powder – 1/2 tsp
  • जायफळ / Nutmeg powder – pinch
  • Mix nuts – 1 tbsp sliced
  • Varak / Silver Foil

Instructions

  1. Heat pan on medium add 1 tbsp ghee and carrot, and cook for 2-3 min
  2. Add 1/4 cup heavy cream, mix and cook until mixture dries, remove and keep it side
  3. Take pan add grated paneer, milk powder, milk, mix everything together
  4. Turn on heat on low- medium, stir continuously
  5. Add sugar, cardamom powder, nutmeg and mix well, cook until mixture thicken
  6. Once mixture thicken, remove half mixture and keep it side
  7. Now add cooked carrot mixture in it, mix well, turn off heat
  8. Now set Burfi
  9. Grease square or rectangle shape tin with ghee and place butter paper at bottom of pan
  10. Take 2 tsp of white mixture place at one bar shape next to that made bar of carrot mixture again white mixture and then carrot mixture and so on until base of tin completely cover
  11. Now repeat same procedure for second layer of barfi just switch colors, cover white mixture with carrot and carrot with white
  12. Set Barfi in refrigerate for an hour
  13. Once Barfi is set, loose all sides with knife and demold barfi on tray or plate
  14. Now cut Barfi in desired size and shape pieces

Tips

  1. Use fresh paneer or chenna for this recipe
  2. Refregerate for 1 hour before cutting
  3. Made with all vrat ingredients, perfect as a vrat recipe
  4. Stir often to avoid burning/sticking at bottom
  5. Use pistachios, almonds as decoration
