Ingredients – Cupcake Batter

  • रवा / सुजी / Semolina – 3/4 cup
  • तांदूळ पीठ / चावलं आटा / Rice flour – 1/4 cup
  • बेसन / Gram flour – 1/4 cup
  • उळीद पीठ / उरड आटा / Blackgram flour – 2 tbsp
  • साखर / शक्कर / Sugar – 1/2 tsp
  • मीठ / नमक / Salt – as per taste
  • अदरक / Ginger paste – 1 tsp
  • मिरची / Green chili paste- 1 tsp
  • हळद / हल्दी / Turmeric – 1/4 tsp
  • हींग / Asafoetida – a pinch
  • दही / Curd – 1/2 cup
  • तेल / Oil – 3 tbsp
  • लिंबू / नींबू / Lime juice – 1 tsp
  • गाजर / Carrot grated – 1/2 cup
  • इनो / Eno / Fruit salt – 1 tsp
  • Water about 1/4 cup

Making Cupcake Batter

  1. Take mixing bowl add semolina, rice flour, gram flour, black gram flour, sugar, salt mix everything well
  2. Add ginger paste, green chili paste, turmeric, asafetida, curd and oil, and mix well, add water and make thick batter
  3. Add lime juice and grated carrot mix well
  4. Cover and keep aside for 10 min
  5. After 10 min add eno/ fruit salt and mix well, batter will get fluffy

Ingredients – Tempering / Tadka

  • तेल / Oil – 1 tbsp
  • मोहरी / राई / Mustard seeds – 1/2 tsp
  • कढीपत्ता / Curry leaves cut fine – 6-7
  • मिरची / Green Chili chopped fine – 2
  • तीळ / तील / Sesame seeds – 1 tbsp
  • कोथंबीर /धनिया / Coriander
  • मीठ / नमक / Salt – as per taste

Making Tempering / Tadaka

  1. Heat pan on low, add oil
  2. Add mustered seeds, once mustered seeds splutters, add curry leaves, green chili, seasame seeds sauté for 30 sec,
  3. Add finely chopped coriander leaves
  4. Set aside

Baking Cupcakes – with oven

  1. Preheat oven on 375 degree fahrenheit or 190 degree celcius
  2. Grease cupcake tray with little oil, placed cupcake liners pour batter in each liner, top each cupcake with tempering / tadka and finely chopped coriander
  1. Put cupcake tray in preheated oven, bake 20-25 min
  2. Check with toothpick, clean toothpick, cupcakes are done

Baking Cupcakes – without oven

  1. Take small katories, grease them inside with little oil, put cupcake liner in
  2. Fill katori with batter
  3. Take heavy bottom deep pot, add salt at bottom of pot spread salt evenly, place rack and cover with lid
  4. Preheat pot on medium heat for 10 min
  5. Place katories on rack and cover with lid
  1. Bake for 30 min on medium heat
  2. After 30 min, insert toothpick in cupcake and check, they are done
  3. Clean toothpick mean cupcakes are ready

Tips

  1. Add eno just before baking
  2. Other veggies like cabbage, bell pepper, spinach,peas can also be added to these cupcakes
  3. Use toothpick or knife to check if the cupcakes are baked

How to serve

  1. Serve hot
  2. Serve with mint green chutney, tempered dahi
  3. Serve for breakfast or evening teatime snacks
