Ingredients – Puran

  • चणा डाळ / Chickpea lentils – 1 cup
  • गुड़ / Jaggery crushed – 1 cup
  • जायफळ / Nutmeg – a pinch
  • इलायची / Cardamom powder – 1/4 tsp
  • तूप / घी / Ghee – 1 tbsp
  • मीठ / नमक / Salt – a pinch

Preparing – Puran

  1. Take one cup chana dal and washed it throughly for 2 or 3 times until clean
  2. In pressure cooker add dal, salt and 2 cups of water, pressure cook dal until soft it will need 5-6 whistles
  3. Once cooker cool down remove lid and check dal, if its mushi then its done. Drain excess water
  4. Heat pan on medium add drained dal and Jaggery mix everything together, cook until jaggery absorbed by dal, and mixture gets thick
  5. Mashed dal while cooking, it helps with grinding puran later
  6. Add cardamom powder and nutmeg powder, Give it proper mix (dry ginger powder is optional i don’t use that)
  7. Turn off heat and let it cool down completely
  8. Once puran cools down, grind it to fine paste
  9. For grinding puran there are few options using mixer, using puran strainer, using puran mill
  10. Smooth soft puran is ready

Ingredients – Dough

  • पीठ/ आटा / Chapati Flour – 1/2 cup
  • मैदा / Maida flour – 1/2 cup
  • मीठ / नमक / Salt – 1/4 tsp
  • तूप / घी / Ghee – 1 tsp
  • पाणी / Water

Preparing Dough

  1. In mixing bowl add both flour, salt and ghee, mix everything
  2. Add water to knead soft dough, cover and keep it for 15-20 mins
  3. Now knead/massage dough and make it very soft and smooth

Making- Puran Poli

  1. Divide dough in six equal size rounds
  2. Take one dough round, dip it in dry flour. Flatten dough round on your palms using thumbs and give bowl (katori / vati) like shape
  1. Make Puran round in double the size of dough round
  2. Put that puran in dough katori, cover and seal puran completely inside dough
  1. Roll to make puran poli gently, dough and puran both are soft. Use little dry flour to avoid sticking
  2. Heat Tava on low-medium
  3. Put rolled chapati on tava roast one side of puran poli, turn carefully with help of spatula, make sure poli will not break. Roast another side poli, it should puff now
  4. When you see brown spots on poli apply little ghee and cook for 10 more sec, repeat for other side
  5. Delicious Puran poli is Ready!

Tips

  1. Soft cooked dal is important to make perfect puran
  2. Drain water completely from cooked dal
  3. Puran can also made with sugar or mix of jaggery and sugar
  4. Using maida is optional
  5. Stretching dough is important to get thin outer layer

How to serve

  1. Serve warm with ghee
