Ingredients – Green Pani/Water

  • कैरी / कच्चा आम / Raw Mango – 1
  • मिर्ची / मिर्च / Green Chili – 3-4 
  • अदरक /Ginger – 1 inch
  • पुदीना / Mint leaves – 1/4 cup
  • कोथंबीर /धिनया पत्ता / Coriander leaves- 2 cup
  • मीठ / नमक / Salt – as per taste
  • काळ मीठ / काला नमक / Black salt – 1/4 tsp
  • Roasted जीरेपूड/ जीरा/ Cumin powder-1/2 tsp
  • मीरे पूड / काली मिर्च / Pepper powder – 1/4 tsp
  • लिंबू/ नींबू / Lime juice – 1 tsp
  • पाणी / Water – 2 cups
  • Salty बूंदी / Boondi – 2 tbps

Making Green Pani/Water

  1. Take green mango peel skin and cut into small pieces
  2. In grinding jar add mango pieces, green chili, mint leaves, ginger pieces, coriander leaves grind smooth paste
  3. Add paste to strainer, add roasted cumin powder, salt, black salt, black pepper powder, lime juice. strain this mixer.
  4. Add cold water and make watery consistent
  5. Adjust salt and pepper powder according to your choice
  6. Green Pani/Water for Golgappa is ready

Ingredients – Sweet Pani

  • खजूर / Dates – 5-6 cut
  • साखर / शक्कर / Sugar – 1/4 cup
  • Roasted जीरेपूड/ जीरा/ Cumin powder-1 tsp
  • तिखट / लाल मिर्च / Chilli powder – 1/4 tsp
  • चिंच / इमली/ Tamarind concentrate- 1 tsp
  • मीठ / नमक / Salt – as per taste
  • काळ मीठ / काला नमक / Black salt – 1/4 tsp

Making Sweet Pani/Water

  1. In same grinding jar with leftover spicy green paste, add dates, sugar, cumin powder, chili powder, tamarind concentrate, grind to smooth puree
  2. Strain puree using strainer
  3. Add salt , black salt mix everything well
  4. Add cold water to adjust consistency
  5. Sweet Pani/Water ready for pan poori

Making Refreshing White Pani/Water

  • ताक / छांछ / Buttermilk – 2 cups
  • अदरक / Ginger juice- 1 tbsp
  • लिंबू/ नींबू / Lime juice – 1 tbsp
  • साखर / शक्कर / Sugar – 1 tbsp
  • मीठ / नमक / Salt – as per taste
  • काळ मीठ / काला नमक / Black salt – 1 tsp
  • Roasted जीरेपूड/ जीरा/ Cumin powder-1/4 tsp
  • मीरे पूड / काली मिर्च / Pepper powder – 1/4 tsp
  • Raw mango + herbs paste – 1 tsp (optional) – prepared while making green pani

Making Curry

  1. Take a m buttermilk, add ginger juice, lime juice, sugar, black salt, salt to taste, cumin powder, pepper powder, mix well
  2. Add raw mango and herbs paste prepare while making green pani, this is an optional step, mix well.
  3. Refreshing white pani is ready

Tips

  1. Using fresh raw mango and herbs gives nice refreshing flavors
  2. Use can also use dry mango powder
  3. Instead of tamarind concentrate, soaked tamarind pulp can also be used
  4. Always adjust salt, sugar as per individual choices
  5. Use cold water for making golgappa pani / refrigerate before serving

How to serve

  1. Make a hole in Golgappa, add boondi, onion, cooked chana, smashed potato,
  2. Now fill golgappa with prepared pani. enjoy the burst of Golgappa in your mouth and refreshing taste of pani.
  3. You can choose to mix two flavor of water
