Ingredients – Shrimp Marination
- कोळंबी / झींगे / Prawns / Shrimps – 10-12 cleaned
- हळद / हल्दी / Turmeric – 1/4 tsp
- तिखट / लाल मिर्च / Chili powder – 1/2 tsp
- मीठ / नमक / Salt – as per taste
- अदरक / Ginger paste – 1/4 tsp
- लसुन / लेहसुन / Garlic – 1/4 tsp
Instructions – Marination
- Peel and wash Shrimps
- Take mixing bowl, add shrimps
- Add turmeric, chili powder, salt to taste, ginger paste and fine chopped garlic, mix well
- Set aside marinated shrimps for 5-10 min.
Ingredients – Fried Rice
- तेल / Oil – 2 tbsp
- Marinated Shrimps
- अंड / अंडा / Egg – 1
- अदरक / Ginger finely chopped -1 tbsp
- लसुन / लेहसुन / Garlic finely chopped – 6-7 cloves
- कांदा / प्याज / Onion finely chopped – 1
- गाजर / Carrot finely chopped – 1/2 cup
- शिमला मिर्च/ Green pepper finely chopped – 1/2 cup
- मटर / Green Peas – 1 tbsp
- फरसबी / Green beans finely chopped -1 tbsp
- पाथीचा कांदा / Green Onion finely chopped – 2 tsp
- भात / पका चावल / Cooked rice – 4 cups
- मीठ / नमक / Salt – as per taste
- सिरका / Vinegar – 1 tsp
- Worcester sauce – 2 tsp
- Soy sauce – 2 tbsp
- मीरे पूड / काली मिर्च / Pepper powder – 1 tsp
Making Fried Rice
- Take a Wok pan or Kadhai, add little oil to pan, add an egg to the pan, cook and scramble the egg, once cooked set aside for later use.
- Add 1 tbsp oil to pan, add marinated shrimps, and cook on med-high till shrimps curls
- Add ginger, garlic, sauté for 30 sec
- Add onion, sauté till onion is cooked
- Add carrots, sauté for 1min
- Add green pepper, sauté for 1 min
- Add green onions, sauté 30 sec
- Add cooked rice and salt to taste, mix well
- Add vinegar, Worcester sauce, soy sauce to rice, mix well
- Add pepper powder and toss the rice on high for 2-3 min
- Add scrambled egg cooked earlier, and mix well, cook for 1 min
- Fried rice is ready!
How to serve
- Serve hot!
- Serve with soy sauce, chili sauce
Tips
- Shrimp curling is an indication that it is cooked, avoid overcooking shrimp for nice juicy bite
- Red chili flakes are alternative to black pepper
- Use finely chopped veggies for fried rice
- Use short grain rice and avoid overcooking the rice
- Roast the rice on high for nice flavors
