Ingredients – Sambar

  • तेल / Oil – 2 tbsp
  • छोटा कांदा / प्याज / Shallots 7-8 pc
  • कढीपत्ता / Curry leaves – 8-10
  • गाजर / Carrot – 1 chopped
  • दूधी / लौकी / Bottle gourd cut – 1/2 cup
  • टमाटर / Tomato – 1 cut
  • शिमला मिरची / Green Pepper – 1/4 cup
  • शेवग्याची शेंग / Drum Stick – 1 cut
  • बटाटा / आलू / Potato – 1 cut small
  • तिखट / लाल मिरची / Chili powder – 1tsp
  • सांबार मसाला / Sambar powder- 3 tsp
  • ओले खोबर / नारियल / Wet Coconut desicated – 1/4 cup
  • तूर डाळ / Toor Daal cooked – 2 cup
  • चिंच / इमली / Tamarind concentrate- 1 tsp
  • मीठ / नमक / Salt – as per taste

Instructions – Sambar

  1. Take a pot, add oil, heat on medium heat
  2. Add shallots, sauté for 2 min
  3. Add curry leaves, carrot, bottle gourd, tomato, green pepper, drum stick, potato to the pot, mix well, cook for 2-3 min
  4. Add chili powder, sambar powder, mix well
  5. Add fresh desiccated coconut, saute for 1 min
  6. Add pressure cooked toor daal with turmeric, mix well, add more water to adjust sambar consistency
  7. Add tamarind concentrate, mix well
  8. Add salt, cook till veggies are done, takes about 8-10 min

Ingredients – Tempering

  • तेल / Oil – 1 tbsp
  • हींग / Asafoetida – a pinch
  • मोहरी / राई / Mustard seeds – 1/2 tsp
  • मेथी दाना / Fenugreek – 1/4 tsp
  • सुकी लाल मिरची / Dry red chilli – 2-3
  • तिखट / लाल मिरची / Chili powder – 1/2 tsp

Instruction – Tempering

  1. Take a pan, add oil, heat on medium heat
  2. Add Hing/ Asafoetida, mustard, fenugreek(methi dana) to pan, and saute for 1 min
  3. Add dry chili to the pan and saute for another 1 min
  4. Add chili powder, mix well
  5. Pour this on to Sambar and mix well
  6. Tasty Sambar is ready!

How to serve

  1. Serve hot!
  2. Serve with Idly, Dosa, Rice

Tips

  1. Solid tamarind mixed with little water can also be used as alternative to pulp
  2. Avoid pressure cooking veggies to prevent them from becoming mushy
  3. Shallots are optional, use cut onion as alternative
  4. Serve with Idly, Dosa, Rice
