Sweet Pongal

Ingredients

  • मुग डाळ / मुंग दाल / Green Gram (Mung Dal)- 1/4 cup\
  • चणा डाळ / चणा दाल / Cheakpea lentils – 2 tbsp
  • तूप / घी / Ghee – 3 tbsp
  • तांदूळ / चावल / Rice – 1/2 cup
  • दूध / Milk – 1/2 cup
  • पाणी / पानी / Water – 3.5 cups
  • मीठ / नमक / Salt – a pinch
  • गूळ/ गुड़ / Jaggery(grated) – 1.25 cup
  • वेलदोडा / इलायची / Cardamom powder – 1/2 tsp
  • काजू / Cashew split – 2 tbsp
  • मनुका / किश मिश / Rasins – 1 tbsp

Instructions

  1. Wash and clean mung dal and chickpea lentils
  2. Now roast washed dal on med heat, add 1 tbsp ghee, roast till lentils turn light golden, set aside
  3. Wash and clean rice
  4. Add washed rice and roasted lentils to pressure cooker
  5. Add milk
  6. Add 3 cups water, a pinch of salt, mix well and pressure cook for 4-5 whistles, let it cool down
  7. Now in a pan, add jaggery, add 1/2 cup water, mix well
  8. Cook till jaggery dissolves, set aside
  9. Open pressure cooker, strain jaggery syrup in to the cooked rice and dal, mix well cook for 4-5 min
  10. Add cardamom powder, mix well
  11. Add 1 tbsp ghee, mix well
  12. Cook for 2-3 min more, Pongal is ready, lets work ion garnishing
  13. In a pan melt 1 tbsp ghee
  14. Add cashew, roast till light golden
  15. Add raisins, roast for 1-2 min
  16. Serve pongal and garnish with roasted cashew and raisins.
  17. Enjoy tasty flavorful pongal

Tips

  1. For sweeter pongal increase jaggery quantity by 1/4 cup
  2. Use short grain new rice (sona masoori)
  3. Using Chana Dal is optional
  4. Serve hot
