Ingredients – Kadhi

  • बेसन / Gram flour – 3 tbsp
  • दही / Curd – 1 cup
  • तूप / घी / Ghee – 1 tsp
  • हींग / Asafoetida – a pinch
  • मोहरी / राई / Mustard seeds – 1 tsp
  • मेथी दाना / Fenugreek – 1/4 tsp
  • िजरे / जीरा / Cumin seeds – 1 tsp
  • िहरवी िमरची / हरी िमर्च / Green Chili – 4-5
  • लसुन / लेहसुन / Garlic – 3-4
  • अद्रक / अदरक / Ginger grated – 1 tsp
  • कढीपत्ता / Curry leaves – 8-10
  • मीठ / नमक / Salt – as per taste

Making – Kadhi

  1. In a bowl take curd, whisk lightly to make it smooth
  2. Add gram four, mix well
  3. Add 1 cup water, mix well, whisk for 1-2 min
  4. Now heat a pot on med
  5. Add ghee
  6. Once ghee melts add asafoetida, mustard seeds, fenugreek seeds, cumin seeds, saute for 1 min
  7. Add chopped green chili, saute for 30 sec
  8. Add chopped garlic, chopped ginger, saute for about 30 sec
  9. Add curry leaves, saute for additional 30 sec
  10. Add buttermilk, mix well
  11. Continue to stir till kadhi start to boils, this is important step to get the smooth kadhi texture
  12. Reduce heat, cook for 2-3 min more on low-med heat
  13. Turn off heat
  14. Kadhi is ready!

Tips

  1. Avoid lumps while mixing gram flour with curd
  2. Stir kadhi continuously till it starts to boil

How to serve

  1. Serve Hot!
  2. Serve with chapati, rice
  3. Serve as soup as well!
