Ingredients
- बेसन / Gram Flour Besan – 1.5 cups
- तूप / घी / Ghee – 1/4 cup
- साखर / शक्कर / Sugar powdered – 3/4 cup
- इलायची / Cardamom powdered – 3
- जायफल / Nutmeg powder – a pinch
- पिस्ता / Pistachio crushed – 10
Preparation
- Sieve gram four to make it lump free
- Heat the heavy bottom pan on low-medium heat
- Add ghee to the pan
- Once ghee melts add gram flour, mix everything carefully
- Break all lumps and stir continuously while roasting the gram flour on low to medium heat.
- Make sure gram flour should not burn at the bottom, otherwise Ladoos would have burning smell and taste
- Roast gram four until changes color to golden brown, and release ghee it takes about 20-25 minutes, turn off the heat
- Add cardamom and nutmeg powder and mix well
- Transfer to mixture to bowl, stir mixture 3-4 times, it helps with cooling it
- Let the mixture cool down to room temperature, it takes about 12-15 minutes
- Add powdered sugar to gram flour mixture and mix it throughly
- Massage everything using your palms until sugar dissolves
- Take a lemon size portion and roll in your palms to make rounds, apply little pressure to make Ladoo (rounds) smooth and shiny
- Decorate Ladoos with crushed pistachios
Tips
- Coarse gram flour works well too
- Make sure to cool down gram flour mixture to room temperature before adding sugar to avoid Ladoos getting hard
